Oven-Fried Zucchini

¼ cup whole wheat flour
¼ cup all-purpose flour
1 Tbsp. cornmeal
½ tsp. salt
¼ tsp. pepper
1 ½ lbs. zucchini (about 3 medium), cut into ½-by-3-inch sticks
2 large eggs
¾  cup panko bread crumbs
1/3 cup parmesan cheese

Preheat oven to 450 F.  Coat a large baking sheet with cooking spray.

Combine flours, cornmeal, salt, and pepper in one bowl.  Beat eggs in another bowl.  Combine bread crumbs and parmesan cheese in another bowl.  Dip zucchini sticks in flour mixture, coating well; then dip in eggs, and finally coat with bread crumb mixture.  Place on baking sheet, making sure the zucchini sticks do not touch.  Spray with cooking spray to coat the zucchini sticks (or drizzle melted butter on top instead).

Bake on center rack for 10-12 minutes until zucchini is tender and bread crumbs are browned. Serve hot with marinara sauce or ranch dressing.
